You are right about “lâap northern style” use blood as an important ingredient and a bit oily. Do you know why we call “เนื้อแดดเดียว” ?

My very first meal in Thailand 15 years ago was dried beef, callled เนื้อแดดเดียว. I like them very much. My other favorite is ลาบอีสาน “lâap Isan style”, because is very spicy. On the other side I don´t like “lâap northern style“. It is consisting too much of blood and rough meat.

Mia, my favourite from your list is ลาบ. I do like the other two though!
